Chocolate Creme Filling

This is a filling to make for the inside of a Yule Log, but also works well as a rich vegan chocolate mousse or garnish for other cakes or fruits.

Chocolate Creme Filling

13.5 oz. can whole coconut milk + 13.5 oz can water
2 Tbs. arrowroot powder or cornstarch
1.5 Tbs. agar powder
pinch of salt

1/2 C. Agave
1/3 C. Cocoa Powder

1. Whisk together coconut milk, water, arrowroot, agar and salt in a large sauce pan.
2. Bring to a boil, then simmer for 5 minutes.
3. Allow to cool then refrigerate until rock hard.
4. Cut gelled coconut mixture into chunks and combine in vita-mix or blender with agave and cocoa powder.
5. Blend until smooth and creamy.
